AUDI PALATES OF PORT – TASTES OF THE TROPICAL NORTH REVEALED

This year’s theme – and menu just released – promises to be a superb follow up to last year’s glamorous inaugural Palates of Port.
 
Port Douglas Carnivale has teamed up with naming sponsor, Audi, to bring you the 2011 Audi Palates of Port themed ‘Tastes of the Tropical North’. Eight of Port Douglas’ finest restaurants and their chefs team up together for this beautiful event which fully realises Port Douglas’ love affair with alfresco gourmet dining and presents ‘Degustation under the Stars’ in the rainforest glade at Flames of the Forest.
 
The participating chefs – who know each other well – have collaborated on the eight course menu so each course is complementary yet distinctive to their individual skills and preferences. The one common element is all dishes must include local produce – hardly a trial!

5. Hot Entree

Grilled Redclaw yabbies, caramelised whitloff, celeriac puree, smoked bacon parsley and truffle veloute

Lime butter brushed Barramundi with a salad of pickled coconut, Miso poached palm heart and a chilli date Puree

Via a giant video screen, each chef details how their dish is prepared, cooked and presented. A team of local food and wine industry professionals have matched the best of Australian wines with each of the eight courses.
 
In conjunction with the theatre created by the eight chefs demonstrating their dishes, the event is also be managed by a professional MC detailing the menu’s dishes, conducting interviews with the chefs and managing the night’s program of entertainment.
 
This year, guests attending will have a free bus trip to the rainforest glade venue, Flames of the Forest, included for the price of the ticket. The location is 15 minutes drive from Port Douglas village and enjoys a spectacular natural setting, cleverly enhanced by ambient lighting and magical theatrical touches. Note there is NO provision for car parking at the venue, and no option to self drive – all ticketed guests will be transferred from Port Douglas to the venue by coach.
